there's nothing more comforting than the Cozy Aroma of a delicious homemade banana bread it's like a warm hug on a chilly day with a super moist texture and an irresistible flavor this is a classic go-to recipe of mine when I'm in the mood to bake something easy and delicious that my family and friends all love it's great because you can enjoy this any time of the day whether as a quick nourishing breakfast as a midday snack or as a healthy dessert it's also a perfect way to use up those over rped bananas just sitting on
your kitchen counter there are a ton of banana bread recipes out there but today I'll show you how I like to make mine I've spent a lot of time perfecting my recipe to make this not only delicious but also nutritious I'll also talk about a few simple ingredient choices I've made to make this banana bread recipe healthier than a lot of the other recipes out there let's get started first let's combine our dry ingredients into a large bowl while many recipes typically call for allpurpose white flour you can also use whole wheat flour almond flour
or oat flour as healthier substitutes you can typically substitute these at a 1:1 ratio by weight a key tip here is to always make sure you're measuring flour properly I recommend measuring by weight using a kitchen scale for the most accurate results or if you don't have a scale you can spoon the flour into a measuring cup and then level it off with a knife just make sure you don't scoop the flour right out of the bag into a measuring cup because it packs together so easily and will give you an accurate quantities for this
recipe I'll be using oat flour you can either buy this prepackaged from the store like this or simply grind up rolled oats in a blender until it turns into a fine powder like this let's add 1 and 1/2 cups of oat flour to our Bowl let's then add 1 teaspoon of baking powder and 1 teaspoon of baking soda for leavening and to achieve a fluffy texture to that let's add 1 teaspoon of ground cinnamon and 1/4 teaspoon of salt to make our flavors pop give these dry ingredients a good thorough mix then for our wet
ingredients we're first going to need a/4 cup of fat while a lot of recipes use butter a healthier alternative that I prefer is coconut oil you can use virgin coconut oil which has a strong coconut flavor and Aroma or refined coconut oil which is neutral and flavorless let's add a/4 cup of melted coconut oil to our recipe then we're going to mix in two large eggs that have been whisked as a tip if you want to make this vegan you can replace the egg with a flax egg by mixing together 1 tbsp of ground flax
seed with 3 tbsp of water this is a quick and easy way to replace one large egg in any baking recipe just double it up to replace two eggs next as our sweetener let's add 1/3 of a cup of honey while many recipes use refined white sugar you can choose healthier natural alternatives like a/ a cup of coconut sugar or a thir of a cup of maple syrup or honey we're then going to add 1/4 cup of Greek yogurt this will help boost the moisture and tenderness of the bread then add 1 teaspoon of vanilla
extract for a pop of delicious vanilla flavor and finally let's grab four medium over ripened bananas or three large bananas the more Brown and spotted the bananas are the better let's mash them onto a plate until it turns into a puree the mashed ban bananas should weigh about 300 G or roughly 11 oz we're going to add that into our bowl and then give it all a good stir until we mix everything thoroughly so that we end up with a smooth runny batter that looks like this once the batter is ready let's add in a
few mixings 1/4 cup of chopped walnuts and 1/ thir of a cup of dark chocolate chips you can also use other nuts instead or raisins instead of chocolate chips if you prefer give it a good mix once that's done we're going to grab a 9x5 loaf pan or something similar let's give the insides a quick spray with cooking oil and then grab a sheet of parchment paper to line the middle of the pan with I like to leave the edges of the parchment paper a little bit longer to make removing the loaf easier let's then
pour our batter into the loaf pan and then I'm going to sprinkle some extra chopped walnuts and chocolate chips right on top we're then going to preheat our oven at 350° F when it's ready let's place our loaf pan inside to bake for 50 to 55 minutes keep in mind that all ovens are different so cooking times may vary when it's done baking let's take it out by lifting it up from the edges of the parchment paper and placing it onto a cooling rack I like to use a toothpick to check for dness by inserting
it inside the middle if it comes out clean it's ready to eat otherwise bake it for another 5 to 10 minutes we're going to let it cool down for about 10 to 15 minutes when you cut into it the banana bread should be nicely browned and slightly crispy on the outside and soft moist and tender on the inside the chopped nuts and chocolate chips will be nicely distributed throughout the bread so you can get a little taste in each bite and when you rip it apart you can see just how soft fluffy and spongy it
is once it's cooled down you can store this away in an airtight container or tightly wrapped in plastic wrap or aluminum foil in the fridge for up to a week or in the freezer for up to 3 months again this was made using simple everyday ingredients that you probably already have at home with a few easy nutritious substitutions for our flour sugars and fats we've made this healthier without sacrificing any taste at all trust me when I tell you how incredibly delicious this recipe is for how easy it was to make it's a recipe that
