' You can see for all the people that are walking around here that we are at a fair, the Mahane Yehuda fair here in Jerusalem, the most delicious fair in all of Israel and we are going to taste various foods together today, to see what kind of flavors they have here, what is sold, but also what is forbidden to sell here. And for this delicious gastronomic tour, I have not one but two special guests, shalom!
[Shalom everybody, shalom! Look here, I couldn't have a better tour! I love it!
I thank you for all the archeology classes, I have attended the last ones and participated with you but this one coming at Mahane Yehuda is spectacular. But let me talk about what matters most that Yair is here, and after Yair wakes up we are going to introduce him, and I am very proud to say that we are three generations here. So if you're ready, let's get started!
And one thing you can't miss here at this fair are the spice and tea stores, come and see with me all these things that we are seeing, people, are different kinds of tea, they are actually dried fruits, you take these little fruits and put them in a glass with boiling water and you get a tea and at the end you eat the fruits. There are also some rice mixes here that you actually put in rice and cook and it is wonderful! And folks, look at the variety that we have here, it's a pity that you can't smell it but here it smells wonderful, all the teas, and here on the other side there are also some nice things, Dad, what did you find here on the other side?
[Jorge] As I am always amazed by this, I want to show you what they do with dried fruits, for example; look at the mango, the watermelon, the strawberry, the pineapple that we know. And look at the watermelon, this is dried watermelon to eat like this and it is watermelon with the rind, let's even try one, let's share it and not only the rind, look, it has seeds too! I haven't seen this before.
[Jorge] It's a watermelon but how different, how wonderful! Every time I come to the market here I discover new things, it's amazing! Now let me show you what is typical here, the dates.
Look how big they are, and also remember that in the Bible it is written that the Land of Israel flow with milk and honey; the milk is from goats and the honey is from dates, so here we can see how it really flows with milk and honey, honey from these delicious dates! And look what I found in the back of the store, I can't reach it, can you get it for me dad? !
Look here folks, coffee from Brazil! It has a Brazilian flavor here, as you can see there are many kinds of coffee, and one of the kinds they sell here is Brazilian coffee, Ethiopian coffee, coffee from many places. [Jorge] But this is the best!
This is the best of all! So guys, here in the Rosemary store, keep this name because it is very worthwhile to come here and try it. And thanks for the tastings today too guys, let's keep going!
There is one thing I can guarantee you that you have never seen at a fair, look what we have here, this is a Synagogue! Yes, a very simple mini Synagogue, but here at the fair there are people who want to pray during the day. In Judaism we pray three times a day; in the morning, in the afternoon and at night, and that is why this Synagogue is open to everyone who wants to come and pray.
Now, how do we know what the prayer schedule is? It's here on the door, it's written "Luach zmanei tefila" which literally means the prayer schedule, so you can see the schedule and come here to pray and let's go inside a little bit to see what else is there inside, there are all the prayer books, so you don't even need to bring your own book, you can come here, take the prayer book and pray. And the most important thing in this synagogue is here at the bottom we won't open it, out of respect, but this is what is called the Aron HaKodesh, that is, "The Holy Cabinet", it's holy not because of the cabinet, but because what is inside is the Word of God, inside here are the books of the Torah, the scrolls, the first five books of the Bible, the Pentateuch is inside here, so at prayer time on Mondays, Thursdays and Saturdays, the doors are opened, the books are taken out and there is a public reading of the Torah, well, let's go on our walk, shall we go father?
! [Jorge] I wanted to show you all, right next to the Synagogue that Aline showed you, there is a store with typical religious products, and I was very impressed with the Kipot with the skullcaps and there are those for children here! Look, it is the cutest thing!
Yair doesn't wear them yet, normally children start wearing them from the age of 3 But there is a question that everyone always asks: [George] Which one? How do you hold it on your head? And here is the answer, can you see folks?
It literally has a built-in clip, so you can use a normal clip on the outside, here it goes inbuilt so that the children don't lose it. So it's not that it's free on the head, it can too, but for those who want to hold it really that it doesn't fly, that's the way. So let's go on our walk.
[Jorge] Let's go because this smell is driving me crazy here! Come on, let's taste the food now! Look at this cart passing by here full of rogalach, which are wonderful sweets, super traditional these ones here on the cart are raw, but the ones on the side here you can see them already ready.
And by the way, we have a recipe for rogalach here on the channel, the link is now up here. In this market, as you have seen they sell everything or better saying, almost everything. There are foods that cannot be sold here, let's explain something first Israel is a democratic country, everyone can buy and sell whatever they want, but this specific market has rules, they follow the Biblical rules; the Old Testament rules regarding food.
So, for example, here next to me there is a butcher shop that will have chicken, beef and lamb, but no pork, because if we look at the passage that is now on the screen, the Old Testament forbids the consumption of pork, and there are also passages that forbid the consumption of other animals, for example seafood. Here folks for those who are fans of shrimp for example, this market is not the place; come here to eat delicious bread, delicious sweets, olives, chicken, beef and other things. Because foods forbidden by the Old Testament will not be sold here, but for those who really want to eat, they are sold in other places here in Israel.
This bakery is simple but has an old tradition, this man has worked here for more than 40 years, and he uses ancient techniques to make bread, let's take a closer look. Wow guys, he goes and sticks the bread on the side of the oven and then he takes it out. You can see it very warm, I mean, there is no tray, nothing.
It sticks to the sides, so this one is really local bread! So he made the warm bread here, he put olive oil and this green spice called za'atar or in Hebrew we also call it azov, it is actually a biblical plant called Hyssop, if you remember when the Jews are coming out of slavery in Egypt there are the ten plagues and before the last plague, and before the last plague they take and mark the doorposts with blood, this bundle of plant they use is the hyssop so it is a biblical plant, and now what matters is also how it tastes. In a little while, I'll call my father, who is sitting there, I'll call him to taste it too, and it's salty, I think the hyssop has a little salt in it.

[Jorge] How delicious, it's different from everything else! [Jorge] Folks, let me show you something very interesting, it's a sesame candy called halva in Hebrew. And this store besides halva, they also have tahine come here to the back with me.
Guys, there is no fresher tahine than this! This is how it was made in the old days, there are two stones, the top one as you can see is spinning, and there is a funnel full of sesame, it falls between the stones and after it is ground it runs down the side and falls down here, this is the pure sesame paste and then we mix it with water, lemon, spices and it makes the tahine that we eat every day here in Israel. And here of course they have a lot of flavors, so there is tahine with Nutella here, this thing is new folks, this didn't exist before.
The traditional one is tahine with lemon and garlic, but here there are a lot of flavors and it is really worth to come here and try it! One of the most traditional foods in Israel is falafel, which is a sandwich filled with fried balls of chickpeas, put humus which is chickpea paste, salad, pickled cucumber and several other things. And on top are fried potatoes, which is nothing traditional, but here everyone eats falafel with fried potatoes nowadays.
"Toda raba" (Thank you very much) Guys, it costs 19 Shekel, I will put here the value also in Reais so for those who want to come here to Israel and eat a cheap food, this is a great lunch and very affordable. But don't forget to leave a tip for the guys because they deserve it. Bon appetit!
