Someone recently asked me, "If I could only have one dessert for the rest of my life, what would it be? " Tough choice, but I have to admit, it's chocolate cake. And not just any chocolate cake.
This specific one. This cake is literally everything you want a chocolate cake to be. Moist, chocolatey, rich, soft, decadent, and so easy.
It still blows my mind. I'm talking one bowl, no mixer, basic pantry ingredients, no sour cream. Easy.
I recommend starting with the ganache so it can cool down to a spreadable consistency. Then make the cake by mixing all of the dry ingredients except the cocoa powder and whisking in all of the wet ingredients. Separately bloom the cocoa powder in hot water along with some coffee which really brings out those chocolate notes and mix that in.
Now initially I shared this recipe as a single layer cake but I'm now turning it into a double layered one as I think that's just what most of us want our cake to be. Just smother the cake layers with the ganache. Don't even have to be too careful with it and dive right in.
