single shot basket suck now if you've been around the channel a while you know that I have some feelings about single shot baskets and Putt depth and it's that single shot baskets suck and don't deserve our time and attention therefore I've have not made a video on how to dial them in but that all changes today because guess what I was wrong what was I wrong about not that single baskets don't suck you know maybe there is one that doesn't suck is bad maybe it's because it's not really a single shot basket as much as
it is a step down basket and it's something that predates the Uber expensive s Works basket that I did my testing on for the 58 to 49 mm video pinned right there and I know some of you are sitting at home just a few of you were going yeah I know as you're eating your popcorn going Lance I knew something you didn't because you're just a Daft YouTuber and I'll say to that you know fair I did know about this I'm ashamed okay maybe it's because of my willful ignorance but Lamar zoko for years has
had a step down basket available for single shots now of course I don't think they knew what gold they were sitting on but they created this 58 to 41 mm step down basket I bought one of course I did because I was like hey that's brilliant and it's built for seven grams of coffee now the idea for seven is that's the single shot in Italian standard seven for single 14 for double you may say wow Lance Puck depth is is your big thing look at these two they're very similar in size I mean still the
one this one is bigger but they're they're similar yeah that one's flatter than a pancake that's been burnt to crisp but heyo there's something there whenever you put coffee into any of these three baskets and you Tamp down you're using a 58 mm tamper which means the top surface portion is 58 mm in diameter which means it's going to be spread super thin let's say you put 2 gam of coffee and you spread it across 58 mm in diameter versus 2 G of coffee across a 41 mm diameter the depth on the 41 is going
to be much greater than the depth on a 58 which means you're going to have a much thinner Puck thinner portion of that coffee is going to be splayed across right here in these baskets however in the 41 mm step down what's going on is all of your dose all seven or eight or whatever grams of coffee you put in here is going to fit in this mini basket down below because it literally is stepping down from 58 to 41 mm when we put it in there you actually use a special Tamp for it which
yeah they make for a 41 mm tamper so it goes into that little basket and you Tamp down if you max out the capacity of here it matches about an 18 G dose in a 58 mm Porta filter yes I'm not kidding you in fact I'll show you right now got nice close enough so as you can see this is 58 mm with 18 G and this is the 41 with 9 G of course this had a much Faller longer drop and it smooshed a little bit and made it appear a little smaller that's why
it's kind of SPL out on the edge and grams are all over here but had that not happened and it maintained its structural Integrity they would be at roughly the same exact height so there's obviously going to be a little bit of Dimension differences because the angles of the walls are slightly different but for the most part those are the same depths yes that does mean in 9 G it should take the same amount of time as 18 G so a 36 G extraction should take the same time as an 18 G so this one
will look a lot slower because it is a gram per second that's how it works okay all right we've got our coffee loaded we're ready to go let's get it 36 G and commence now I've been really into these deeper pucks this idea of matching depth in order to get you know a better extraction more even extraction and more efficient extraction and overall better tasting coffee that's been a big thing of mine in recent times and really the only way to kind of get that if you have a 58mm machine is by doing a step
down style basket now so far there's only really been one on the market and it's like 200 bucks which isn't ideal so the fact that this is an option I think is pretty great so that finished in about 22 seconds uh because we have a 4se second pre-infusion essentially and it doesn't count that on the screen so ignore that about 22 seconds and I mean there we go that should be illegal how crazy that looks okay now this ratio still isn't ideal to me I would like a deeper Puck still I still think that 18
G and a 58 is too shallow in my opinion I much prefer a minimum of like 21 gam dose which would be like 11 or so in the step down but this is not deep enough it's barely deep enough to hold nine you have to be really you have to be really schnazzy to get nine in there but anyway I mean look at this all right it's capable all right all right all right let's see if we can match that with the single shotter and there we have it we got the single shot in here
and we're going to get that in and pull right around 18 G to have a a nice yield that matches the previous of 1 to two all right we've got our prefill and then stop and then we go again oh all right so I had to manually stop it I forgot to change the target goal in here but we got out 19 so we overshot it a second or a gram but it came out in right at the same time so it was a 1 second faster but it came out in 17 seconds on here
so 21 seconds when you include the 4C pre-infusion and I mean bada bing bada boom there we have it very very very similar of course as you would imagine both taste quite nice I think one of the reasons that single shot baskets have gotten such a bad rap is that the main type of single shot basket is that which is now on the ground in trash land and that is a shallow Puck that's 58 mm and that's what everyone kind of thinks about when they do single shots I've worked with hundreds of shops and trainings
and different things like that over my time in coffee and I've never once seen one of these La zoko baskets in fact I never heard of it and I've been to Lam moko's Factory never even heard of it or seen one until someone brought it up to me in a comment recently thankfully I still look at most of the comments cuz that I immediately went online found one at one person in Europe that was selling them and I got one sent to me you have to have an extra tamper and I think a lot of
people just saw that as too much faf and so they went with the normal single shots being okay with just worse shots I know for a fact that a lot of cafes just don't want to change their grind size and so they'll just pull worse coffees for single shots or they will just like with their decaf they don't really care what it pulls at cuz it's decaf they just care about their main house blend and their double shots of espresso even at this dose with a 7 G dose in this which is what was recommended
it's still hard to get consistency just as hard as it would be to get consistency with like a 16 gam dose in a 58 mm basket this idea isn't new depth matching depth is going to help with extraction especially when you're trying to use the same grind size it's going to help with workf with coffee waste and all of the like and if you have a 58mm machine and you have access to one of these it might be a nice little investment in order to get something to have your single shots in the afternoons if
you don't want to commit to a full double or if you just want less coffee to dial in you could dial in using half the amount of coffee and then switch to a 58 mm basket when you want to do your full shot that way you waste a lot less coffee so let's say you get your smaller Basket in you dial in using a 7 G dose boom you dial you dial you dial let's say it takes you three shots to dial into a 30 second shot in a one to2 ratio then you've wasted 21
gam of coffee then you can switch in put in your full dose and you're already dialed in so you're wasting less coffee to dial in cuz you can switch between the baskets you can have less caffeine in the afternoon while still getting that delicious espresso lots of things kind of open up I'd like 41 mm but I would like it to be a bit deeper so I can fit 12 gram of coffee in there that way or I'd like an even narrower basket so that eight grams would be even deeper not necessarily we need depth
like this we need a 1 mm wide basket and the ultimate depth no that's silly there's obviously limits to everything but I do think that in order to get really nice extraction there are there there are specific limits that we should be within for shops that you know aren't wanting to convert to a smaller diameter you could have this as like a single shot option right uh but also I just think it's nice to add to the data to add to the experience to add to this kind of progression of videos where we're looking at
