Shalom and welcome back to "Israel with Aline" Today we have a very special video We will make together Challah bread that is a tradicional bread for the Shabbat In the video we will make all the recipe and talk about the importance of the bread here in Israel through the times Are you ready? So let's begin! We start mixing all the dry ingredients 700 gram wheat flour 85 gr white sugar 15 gr salt 25 gr yeast mix mix it all and now the remaining ingredients 55 ml oil, I'm using canola oil 1 big egg 315 ml of water but don't put it all in yet later you will see why and now we will mix it in the mixer for 2 minutes in the lower mode The full recipe will also be in the video description, so don't worry after the 2 minutes we check the bowl if is still flour inside we add the remaining water and mix for 10 minutes in medium speed and if you don'e have a strong mixer you can do this recipe by hand after the 10 minutes we will get a smooth dough and for better results use wheat flour special for bread because it has more gluten and give us a more fluffy bread and now we take the dough out from inside and put on the table with a bit of flour a bit more it's very simple, we fold the bread 2 or 3 times and than make it round and leave the dough to rest for more or less two hours, and it will grow in size cover with plastic wrap and a kitchen towel and while our bread rests, let's talk about the shabbat dinner at Friday night when all the family gathers around the table we make two blessings, in Hebrew Brachot the first one is over the wine the second one is the bread, that we make over the Chalah Bread and is this one: Baruch atah Hashem, Elo-heinu Melech Ha’Olam Hamotzi lechem min haaretz.
that means: Blessed are You, L-rd our G‑d, King of the Universe, Who brings forth bread from the earth. But when we do this blessing (on Shabbat) we always do it over 2 challah breads Why? This is a very ancient tradition, it come from 3200 years ago when the jewish people wandered in the desert and God sent the Manna and every day came one Manna "portion" per person and a person could one get one If someone took two, one of them would spoil until the next day the only exception was Friday because the Saturday is the day of rest and they couldn't go out to take the Manna Back in the desert times, on Friday every one took two one for Friday and one for Saturday (shabbat) and was to only day that the Manna didn't spoil from one day to the other And in memory of that, until today the blessing over the bread on Shabbat is with two Challah breads.
So now let's see how is our dough look this, the dough filled the bowl We are taking the extra air from inside and put it on the table We will divide it in two, for our two challah breads and now we will make the "Afrashat Challah" is not a mandatory step but is a tradition with more than 2000 years during biblical times, when the Temple of Jerusalem still existed They used to take a part of the bread and prepare and give it to the priests of the Temple So we continue to separate a part of the bread but because we don't have the Temple of Jerusalem today we will take this piece of the dough, put it on aluminium foil and burn it, in memory of the Temple and it's destruction so i have here a piece of the dough and we say the following blessing: "Baruch Ata A-donai E-loheinu Melech Haolam Asher K'dishanu B'mitzvotav V'tzivanu L'hafrish Challah. and this I will put here in the oven and let it burn The next step is to take each Challah, and divide it in 3 and each piece we will make a long line so we can braid it later we can see that the dough is not sticking to the table this means is already on the right "point" don't add more flour, otherwise the bread will be to hard we will take the 3 parts and join them and braid it and the end we fold it a bit down We transfer it now to a tray with parchment paper and let it rest for more 30 minutes while covered with a kitchen towel meanwhile we make our second challah and with the second part of our dough we will make a round Challah, that is special fro Rosh Hashana - the Jewish New Year that is in a month and a half the same way we did before, we dividing it in 3 parts and each part we make the "rolls" but this time we make them thinner and longer are you ready?
